What is tempeh?

Tempeh traditionally comes from Indonesia. There, cooked beans are inoculated with Rhizopus fungus spores and left to ferment in palm leaves for several days. The fungi feed on the starch in the beans and grow their protein-rich mycelium through them in return. Hence the unusual look and texture of tempeh. In addition, tempeh also contains probiotics, i.e. special bacteria that produce lactic acid and support the intestinal flora in our digestive tract.
