Carrot Cake with A2 Casein Frosting

Ingredients
For a loaf pan you need: ⠀
- 120 g cassava flour (or a flour alternative that is compatible with you)⠀
- 300 g carrots, freshly grated⠀
- 80 ml maple syrup (or honey) ⠀
- 2 organic eggs ⠀
- 60 g pasture butter (melted)⠀
- 120 ml oat milk (or other milk) ⠀
- 1/2 pack cream of tartar baking soda ⠀
- 60 g pecan nuts (crushed into small pieces)⠀

Spices:⠀
- 1 tsp ginger⠀
- 1/2 tsp cinnamon ⠀
- 1 tsp vanilla⠀
- 1/2 tsp salt ⠀
For the frosting 🧁 ⠀
- 100 g sheep's milk yoghurt or quark (or A2 yoghurt such as the dairy products from the Demeter Association)⠀
- 40 g @lykaiaforest A2 Goat Casein⠀
- 1 tsp vanilla ⠀

Preparation
Mix all the ingredients together and crumble in the nuts at the end. If the dough is too runny, add a little more flour. This depends on the water content of the carrots. Place the cake in a greased loaf tin and bake in the oven at 180 degrees C for about half an hour. ⠀⠀

Prepare the frosting in the meantime 🧁 ⠀

Mix the frosting ingredients together until you get a spreadable cream. Sweeten with a little coconut blossom sugar if needed. Put something into the fridge. Allow the cake to cool completely before icing. A few grated coconut or crumbled nuts on top give the ideal finish 👌🏼⠀
