Nordic cinnamon roll waffles
The first flavors that come to mind when we think of Scandinavia are blueberries and cinnamon. We love this combination and it is not for nothing that our goatmeal comes in the "Maca cinnamon roll" variety. But you can do a lot more with it than just goatmeal. At some point we got bored too, but then this waffle recipe came about! The whole kitchen smells of cinnamon in the afternoon when we bake waffles.
- 60 g goatmeal maca cinnamon roll
- 20 g maple syrup or honey
- 2 eggs (vegan: 2 tsp flaxseed with 2 tbsp water)
- 100 ml water (or slightly less)
- 30 grams of oat flour
Toppings: Wild blueberries and cinnamon
Process all ingredients (except for the toppings) to a homogeneous mass and bake in a waffle iron with a little coconut oil. For us, the amount makes about 4 small or 2 large waffles. We top it all off with wild blueberries and even more cinnamon.
Tip: If you like, you can also add some of the blueberries to the batter so that they melt so deliciously during baking, as in the picture below.
