For Mother's Day: Rhubarb cake with A2 casein

Sunday is Mother's Day. Why not bake something? Too expensive or too unhealthy? - Not with our rhubarb cake!

You only need a few ingredients, 15 minutes of your time and mom will be happy. Especially about the nutritional values ​​of the cake, because we replaced part of the flour with A2 casein. Is easier on the stomach and ensures more satiety.

Ingredients

For the dough:

  • 100 g Lykaia A2 Casein
  • 300 g goat yoghurt
  • 4 eggs
  • 1 packet of vanilla pudding
  • 70 g coconut blossom sugar
  • 3 rods rhubarb
  • Zest and juice of 1 lemon

 

For the sprinkles:

  • 100 g of oat flour
  • 50 g butter
  • 50 g coconut blossom sugar


Preparation:

Preheat the oven to 165 degrees convection. Mix all the ingredients for the dough in a bowl and pour into a round baking pan. Knead the ingredients for the crumbles into a crumbly dough and then distribute small crumbles on the dough. For a lower carb cake, simply leave out the crumbles.
